Tatsoi Mustard is a fast-growing, cold-hardy Asian green known for its glossy, spoon-shaped, dark green leaves that form a low, compact rosette. Originating from China and widely cultivated in Japan, tatsoi has been prized for centuries for its tender texture and mild, slightly mustardy flavor. The plant grows just 6 to 8 inches tall but can spread up to 12 inches wide, making it a striking addition to both vegetable and ornamental gardens. Tatsoi thrives in cool weather, tolerating light frosts and remaining harvestable even under snow, which sweetens its flavor. Matures quickly, often in just 40 to 50 days from sowing making it ideal for succession planting. Best grown in full sun to partial shade with rich, well-drained soil, tatsoi is also suitable for container growing due to its compact form. In early spring or fall, the plant may produce delicate yellow flowers, which are also edible and attract pollinators.
