Amaranthus hypochondriacus, commonly known as Grain Amaranth, Prince’s Feather or Purple Amaranth, is a tall, upright annual prized for its striking, plume-like flower spikes and nutrient-rich seeds. The flowers start out purple or burgundy changing to brown as they mature and dry. Native to Central and North America, this species was a staple crop of the Aztecs, valued for its protein-rich grains. Growing 4 to 6 feet tall, it produces long, dense inflorescences in shades of deep red to purple, contrasting with its lance-shaped green or reddish leaves. Flowering from midsummer to frost, it is a magnet for pollinators and thrives in full sun with well-drained soil. The tiny, golden seeds are edible and rich in lysine, an amino acid often lacking in grains. Known for its drought tolerance, A. hypochondriacus is well-suited for hot, dry climates and makes an excellent addition to both ornamental and edible gardens. Collecting seeds is easy, making this plant a sustainable choice for seed-saving gardeners.
