Fish Pepper is a historic African American heirloom associated with seafood cookery around Baltimore and Philadelphia. Its compact plants have variegated green and white foliage, while the peppers pass from pale cream through striped green and orange brown before ripening red. Pale young peppers traditionally added heat to cream sauces without darkening them.
The modern seed saving story connects Horace Pippin, H. Ralph Weaver, and William Woys Weaver, who helped return the variety to wider circulation.
