Fish Pepper is a historic African American heirloom associated with seafood cooking around Baltimore and Philadelphia. Its compact plants have variegated foliage, and the fruit passes from pale cream through striped green and orange brown before ripening red. Pale young peppers traditionally added heat to cream sauces without darkening them.
The modern seed saving story connects Horace Pippin, H. Ralph Weaver, and William Woys Weaver, who helped return the variety to wider circulation. Heat varies, commonly about 5,000 to 30,000 Scoville units, and fruit matures in about 80 days.
