Pasilla Bajio Pepper Seeds

Pasilla Bajio is a Mexican chilaca type pepper with long slender pods that mature from dark green to brown and become wrinkled when dried. The dried chile is the familiar pasilla, valued for a smoky raisin like flavour in mole, enchilada sauces, and salsa.

Pasilla means little raisin, referring to the dark wrinkled dried pod. Harvest timing depends on whether the peppers are used green, fully coloured, or dried.
