Pasilla Bajio is a Mexican chile grown for long slender pods that mature dark green to brown and become wrinkled when dried. The dried pepper is the familiar pasilla, valued for smoky raisin-like flavor in mole, enchilada sauces, and salsas. Heat is mild to medium, commonly in the 1,000-2,500 SHU range on the Oak Summit label. Harvest timing depends on whether pods are used green, fully colored, or dried.

Origin and history

Mexican chile; pasilla means little raisin, referring to the dark wrinkled dried pod.
