The Skorospelka Purple Jerusalem artichoke is a hardy, fast-maturing variety known for its  purple skinned tubers.  This variety is notable for its cold tolerance, thriving in cooler climates and performing well in poor or sandy soils.

The tubers of the Jerusalem artichoke are knobby, irregularly shaped, and resemble small, rough potatoes. They can vary in color from light brown to reddish-purple, depending on the variety. These tubers are rich in inulin, a type of carbohydrate that gives them a slightly sweet, nutty flavor when cooked. Jerusalem artichoke tubers grow underground and spread vigorously, allowing the plant to form dense colonies over time. Harvested in late fall after the first frost, the tubers can be eaten raw, roasted, or cooked like potatoes. Their hardy nature makes them an excellent food source in colder climates.
