Borage, also known as starflower, is a versatile annual herb that grows up to 60-100 cm tall. This plant is distinguishable by its bristly or hairy stems and leaves, with leaves being alternate, simple, and 5-15 cm long. The flowers are particularly striking, often blue, with five narrow, triangular-pointed petals, forming loose drooping clusters. While blue is the most common color, pink and white-flowered types are also cultivated, with blue being genetically dominant. Borage is notable for its long flowering season in temperate climates, blooming from June to September, and in milder climates, it can bloom almost year-round. The seeds of borage are rich in gamma-linolenic acid (GLA), an Omega-6 oil, making them a valuable source for borage seed oil, also known as starflower oil.
Native to the Mediterranean region, borage has naturalized across various parts of the world. It thrives in gardens across Europe and self-seeds, ensuring its presence year after year. The plant's flowers are not only a culinary delight, adding a sweet, honey-like taste to desserts and cocktails but also serve as an excellent nectar source for bees, contributing to a light and delicate honey.
