State Fair is an apple introduced by the University of Minnesota in 1979 from Mantet crossed with Oriole. It later contributed to the breeding of Zestar!, released in 1999.
The medium sized fruit has bright red stripes over yellow skin and crisp, juicy flesh with an aromatic flavour. It suits fresh eating and baking but stores for only about one month after harvest.
