Parsley (Petroselinum crispum) is a Mediterranean biennial usually grown as an annual for its aromatic leaves. Curly and flat leaf forms develop a leafy rosette in their first year.

Parsley seed is naturally slow to germinate. Soaking it for several hours before sowing can help it take up moisture, but cold stratification is not required.
