Parsley is a biennial herb valued for its bright green, finely divided leaves and robust flavor. Native to the Mediterranean region, parsley has been cultivated for over 2,000 years. In its first year, the plant forms a rosette of crisp, aromatic leaves, which can be either curly or flat-leafed, depending on the variety. Parsley grows 12 to 18 inches tall and can be biennial in zone 5 but often grown as an annual for the leaves. Easy to grow and highly productive, parsley is a staple in herb gardens and an essential companion plant, repelling pests while enhancing the flavor of neighboring vegetables. Notably slow to germinate, parsley seeds benefit from soaking in water for several hours before planting.
