Jerusalem Artichoke Seeds

Jerusalem Artichoke (Helianthus tuberosus), also called Sunchoke, is a perennial grown for edible underground tubers. The irregular tubers are about 3 to 4 inches long, vary from brown or white to purple, and are harvested in fall.

Plants grow quickly, carry leaves up to 12 inches long, and flower in October. Tubers left in the ground regrow the following season.
