secret to getting a grafting knife razor sharp is a buffing wheel. In between sharpening also, a few seconds of buffing brings back the edge. Note that grafting knives have just one bevel so only get sharpened on one side. I like to test by cutting paper, when it’s very sharp it cuts like butter with no tearing, it’s a test where you can qualitatively feel how sharp the edge is. I’ve also tried using razor blade / utility knives but I don’t find they feel sharper or cut easier. you can get the same effect from a leather strop or belt, or probably an even better edge by having a series of high grit wet stones and patience.
